Two of my favourite things in this world are coffee and dessert. Though I try not to consume too much of the latter, this simple recipe combines these favourite things, but is relatively guilt-free in comparison to most of my favourite post-dinner treats (I'm looking at you, chunky chocolate brownies).

Here's what you need:
Good quality vanilla bean ice cream - 1 or 2 scoops per person
A shot of Espresso
Serving glasses or bowls (chilled beforehand)

All you have to do is drop a generous scoop (or two!) of ice cream into your glass and top with a shot of espresso and serve with biscotti. The result? A creamy but lighter-than-your-average dessert that goes down oh-so-well at any time of the day or night! 

For a strictly adults-only version, add a shot of Italian liqueur like Frangelico to your espresso before pouring on top of your ice cream. Isn't that a far more decadent and classy caffeine/booze concoction than vodka and red bull?
