As you may have already figured, I'm trying to keep my meals as light, healthy and unadulterated as possible. It's almost summer down under and the thought of getting into a bikini to go to the beach is making me a little uncomfortable. I am guessing that some of you are in the same boat as me so I figure you won't mind me sharing a few of the healthy recipes I've been creating in my kitchen. This is the simple four bean salad I made for last night's dinner. It's a ripper of a meal because the fibre in the beans helps to fight cravings by keeping you fuller for longer. Speaking of craving busters, coconut oil is another miracle food in that regard. It stope cravings dead in their tracks and speeds up the metabolism. Read all about it here. I eat a tablespoon after each meal and it miraculously stops me from my inevitable post-dinner chocolate craving. Aaaaaanyway, back to the salad.

To serve 2 starving (or 3 slightly hungry) people as a main, you will need:

2-3 spring onions, chopped
1/2 capsicum
1 Lebanese cucumber, sliced
A handful of parsley, chopped finely
2 cans of Four Bean Mix


Juice of 1 lemon
2 tbsp Red Wine Vinegar
2 tbsp Olive Oil

All you've got to do is throw it all together. It can be served straight away or left in the fridge for a few hours so the ingredients can get properly acquainted with each other!

  1. This looks so good...I do like a good bean salad...just never make them. My bikini days are well and truly over...sadly.
